This DOP Taleggio cheese is made by CasArrigoni who still make this soft cow's milk cheese in the Taleggio mountain valley. It's sweet, buttery and fragrant with a hint of acidity. The Arrigoni family mature their cheese in underground maturing cellars, quarried into the mountains, it provides the perfect conditions for the cheese to develop it's unique flavour.
