First time making a Thai Green Curry with the Maesri green curry paste, the coconut milk, Thai Jasmine rice & sweet chilli sauce all sourced from yourselves. We were 8 people dining and I wanted something easy to prepare. I did a dummy run the week before and found the paste to be so flavoursome with a nice kick that suited me and my husband but decided to reduce the amount of paste used to tone down the spice a little bit to ensure it suited all palettes. The second time of cooking I actually made it the day before, slowly reheated the next day to avoid the coconut milk splitting and added precooked al dente green beans (substituted instead of the recommend eggplant) to heat through just before serving. It was absolutely delicious with very authentic flavour, one guest said it’s the best Thai curry he’s ever tasted and he’s 80!
