Mafaldine pasta, also known as "reginette" or "mafalde", is a type of ribbon-shaped pasta with a distinctive wavy or ruffled edge on both sides. The pasta's shape is versatile, making it suitable for a variety of dishes, from light olive oil-based sauces to rich, hearty ragùs. Its name is said to have been inspired by Princess Mafalda of Savoy, an Italian princess from the early 20th century.
Pasta Michele Portoghese is an artisan pasta producer based near Florence, in the heart of Tuscany. The key to this pasta being amazing is not only using a bronze die to extrude the pasta dough but also slowly drying it which gives the pasta such a great texture.

It's always best to cook pasta in plenty of salted boiling water, roughly 1 litre of boiling water per 100g of pasta. This pasta will cook to 'al dente' in 8-10 minutes.
