Hevva Cornish Hake in Lemon is a tin of hake landed in Cornish waters and canned by Hevva at Norton Barton Artisan Village in Bude. The brand takes its name from the shout a Cornish lookout once gave when a shoal of pilchards was spotted heading for shore. Hevva are on a mission to make hake - one of the most sustainable fish landed around the UK, yet still overlooked in favour of cod - a storecupboard regular again. It's kept simple here: just the fish, rapeseed oil, agave and lemon.

It's built for the kind of lunch you can put together without really cooking. Flake it through warm pasta or a potato salad with the oil from the tin doing double duty as the dressing, or pile it onto good buttered sourdough with a grinding of black pepper. It holds its own in a simple green salad too, and the lemon note means it doesn't need much else alongside it.

How to use:

  • Flake through 150g of warm cooked pasta with a squeeze of lemon and a handful of chopped parsley, using the oil from the tin as the base of the sauce
  • Pile onto hot buttered sourdough toast with black pepper and a few capers if you have them
  • Fold through a potato or bean salad while the potatoes are still warm, so they take on the oil
  • Stir through a green salad or slaw, using the oil from the tin as the dressing
