Louise Bees Hot Habanero Honey is raw honey from West Country Bees, infused with habanero chilli, made by Louise Bees just up the road from us in Rode, Somerset. Unlike most hot honeys built on a cheap, blended base, this one starts from raw, unpasteurised honey that's only ever lightly filtered, so the pollen, enzymes and natural character of the honey are still there before the habanero even gets a look in. The heat builds slowly: honey sweetness first, then the fruity warmth of habanero, with the chilli heat arriving last.

Drizzle it over a wedge of hard cheese or a warm slice of cornbread, stir a spoonful into a marinade for chicken thighs, or finish a pizza margherita with it straight from the jar. It's particularly good with anything creamy or salty that needs a lift - goat's cheese on toast, a fried egg, or halloumi hot off the grill - where the honey's sweetness gets to arrive first, before that habanero warmth catches up.
