Pasta Michele Portoghese Fusilli Buco is a traditionally made Italian pasta crafted for depth of flavour, texture and sauce-holding ability. Shaped into corkscrew spirals, fusilli bucu was traditionally made by twisting a thin rope of pasta dough around a knitting needle. This shape is designed to catch and hold sauces, making it ideal for rich tomato sauces, pestos, slow-cooked ragùs and chunky vegetable-based dishes.

Made in Tuscany, Portoghese pasta is all produced using bronze dies, a traditional method that gives the pasta a slightly rough, porous surface. Unlike smooth, industrially extruded pasta, bronze-die pasta allows sauces to cling to each strand, delivering fuller flavour and better texture in every bite.

This pasta is slowly dried at low temperatures over an extended period. It's one of the most important elements when manufacturing dried pasta as it helps create an almost creamy mouth texture when combined with the sauce. It also helps prevent brittleness, improves cooking performance and results in pasta that cooks evenly with a satisfying bite.
