Tean's Gourmet Chicken Curry Paste is a bit of a kitchen secret - made in Malaysia using a traditional recipe and a properly fragrant spice blend, it does the slow, patient work of a Malaysian curry kitchen for you. This Chicken Curry Paste is warm rather than fiery, with lemongrass, galangal, ginger and a gentle blend of dried spices including coriander, cumin, fennel and cinnamon. The result is a deeply aromatic, golden curry with real depth - the kind of flavour that usually takes a long shopping list and an afternoon at the stove.

It's a brilliant midweek shortcut without feeling like a shortcut. Fry the paste off in a little oil until fragrant, add chicken thighs and diced potatoes, simmer for fifteen minutes then add in coconut milk and finish with a squeeze of lime. Serve with rice or roti and you've got a proper Malaysian-style chicken curry on the table in well under an hour.

How to use:

  • Fry 1 pouch in a splash of oil with 1.5kg of diced chicken thighs and 2 potatoes (peeled and cut into cubes) over a medium heat until fragrant, around 5 minutes. Add 250ml of chicken stock and simmer for 15 minutes. Pour in a 400ml tin of coconut milk and bring back to a simmer. Finish with a squeeze of lime and a handful of coriander; serve with jasmine rice or roti
  • Also excellent with prawns, tofu or root vegetables in place of chicken
