Tutto Calabria Condi Spaghetta Mix is a dry seasoning blend that recreates one of southern Italy's great pantry suppers - spaghetti aglio olio e peperoncino - in a matter of minutes. Produced by Tutto Calabria, a family business based in Marcellinara in the heart of Calabria, the mix brings together dried Calabrian chilli pepper, garlic, parsley, tomato and a touch of black pepper in a single ready-mixed sachet. The result is bold, a little fiery and deeply savoury: everything you'd expect from a region that takes its chillies seriously.

This is weeknight dinner sorted. Tip the contents into a splash of good olive oil, let the aromas bloom for a minute or two, then toss with al dente spaghetti and a little pasta water to bring it together. The dried Calabrian chilli gives a clean, direct warmth rather than a slow build, and the garlic and parsley round everything out into something that tastes properly cooked rather than thrown together. It works equally well with linguine or rigatoni, and a handful of black olives or a few anchovy fillets stirred through at the end take it somewhere altogether more interesting.

How to use:

  • For a classic spaghetti aglio olio e peperoncino: cook 200g of spaghetti in well-salted boiling water. While it cooks, warm 3–4 tablespoons of extra virgin olive oil in a wide frying pan over a medium-low heat, add the entire contents of the sachet and stir for 1–2 minutes until fragrant. Reserve a ladleful of pasta water, drain the spaghetti and toss in the pan with the seasoned oil, adding a splash of pasta water to loosen. Serve immediately.
  • Stir through cooked linguine with a few torn anchovy fillets and a handful of black olives for a quick puttanesca-style supper.
  • Bloom the spice mix in olive oil first, then add a 400g tin of chopped tomatoes and simmer for 15 minutes for a quick, punchy tomato sauce.
