Hevva Crab Bisque is a rich, cream-based soup made with pot caught Devon brown crab meat, West Country cream and a glug of brandy, from Hevva, a small-batch seafood producer working out of a farm in Bude, North Cornwall. The name comes from the old Cornish fishing cry - "Hevva!" - shouted from the clifftops when a shoal of pilchards was spotted, sending the small boats out to sea, boats which still make up the majority of Cornwall's fishing fleet today. This bisque brings that same hand-prepared approach to a proper luxury soup, built around real crab rather than flavouring.

Warm it through gently rather than boiling it hard, so the crab stays tender and the cream doesn't split, then ladle into bowls with a swirl of extra cream and a grinding of black pepper. It's rich enough to serve in small portions as a starter with warm crusty bread for mopping up, or stretch it further as a light lunch alongside a green salad. A final splash of brandy or dry sherry stirred through just before serving brings the flavour back up if it's mellowed during storage.
