Duffy's Honduras Indio Rojo 72% Dark Chocolate, 60g

Duffy's Honduras Indio Rojo 72% is a single-origin, bean-to-bar dark chocolate made in Lincolnshire from rare Indio Rojo cocoa beans grown in Honduras. Duffy Sheardown, a former motor-racing mechanic, buys the beans direct from the growers, then roasts them gently and stone-grinds them to bring out their complexity. This is the bar that put him on the map: in 2011 it won the Academy of Chocolate's Golden Bean for the best bean-to-bar chocolate.

Break off a square and let it melt slowly on your tongue. It's strong and complex, opening with sweet currants and tangy orange before finishing on raisin and coffee. It's a lovely bar to share at the end of a dinner party alongside a strong espresso, a glass of tawny port or a peaty whisky. It also makes a thoughtful small gift for anyone who thinks they don't like dark chocolate.

How to use:

• For tasting, make sure the bar is at room temperature, then let a 5g square melt slowly on your tongue rather than chewing it
