In Mexico, tortillas are made fresh every day from masa, a dough of maize that has been soaked in lime and then ground. Fresh corn tortillas are soft and pliable and taste properly of corn, and they're very different from the dry, folded ones sold in packets. They're also simple to make: masa harina, water, a pinch of salt and a press. This kit has everything you need to make your own at home. It includes a heavy 19cm cast iron tortilla press, a 6-inch red tortilla warmer and a 1kg bag of Naturelo white masa harina, made from nixtamalised Mexican corn.
To make tortillas, mix the masa harina with warm water, a pinch of salt and mix into a soft dough. Then roll it into golf ball sized balls. Press each ball into a thin round and cook it for under a minute on each side in a hot dry pan. Stack the tortillas in the warmer as they come off the heat, where they steam gently and stay soft until everyone sits down. Fill them with slow-cooked pork, grilled fish or spiced black beans, add salsa, lime and coriander, and you have a proper taco night. It's the perfect gift for people who love tacos, and for anyone who enjoys cooking for friends or trying something new in the kitchen.
• Mexican Fish Tacos
• Tacos al Pastor
• Chicken Tinga Tacos
For tacos for 3 to 4 people, mix 220g masa harina with around 275ml of tap hot, hot water and a pinch of salt, and knead for a few minutes to form a soft dough that doesn't crack. Rest it for 15 minutes, then roll it into golf ball-sized pieces. The press is supplied with two sheets of plastic, place the ball between the plastic sheets and press each ball firmly (but too hard). Peel off the tortilla and cook in a hot, dry pan for 45–60 seconds on each side, then keep warm in the tortilla warmer.

Very impressed with the service provided by the Somerset Foodie- excellent communication, carefully wrapped goods, personal touch with a hand written note - a lovely feeling that you are dealing with real people 😊 who care!
Very delicious beans. Quick to cook after overnight soak.
Always speedy delivery, always perfect products, great prices, always tell all my friends about Somerset Foodie. Planning to visit soon. Great coms too Ben!
I bought this honey as I'd heard that consuming honey produced by bees local to where you live, I live in west Wiltshire, helps with pollen allergies. No idea if that's true, but this is beautifully tasting, quite unlike anything bought in a supermarket. Worth buying.
