Tutto Calabria’s Condimento per Spaghetti is a rich, spreadable paste made from sweet peppers, hot Calabrian chillies and sun-dried tomatoes, cooked down together with extra virgin olive oil. Despite the name, this isn’t a dried spice mix for sprinkling over pasta – it’s a soft, jammy condiment with real body, made by the same Calabrian family producer, Tutto Calabria, who have worked with the region’s chillies and tomatoes since 1970. Warmed through, it turns glossy and deep red, with a sweetness from the peppers balanced by a steady, building heat.

It’s often described as a vegan nduja, and used in much the same way: stir a spoonful through hot pasta with a splash of the cooking water for an instant, richly flavoured sauce, or melt it into a tin of tomatoes to add depth without a long simmer. Beyond pasta, it’s just as good stirred through risotto, spread onto bruschetta, spooned over grilled fish or chicken, or added to a pot of beans or stew for a hit of Calabrian warmth.

How to use:

  • Warm 2-3 tablespoons gently in a pan and stir through 300g of just-cooked spaghetti or other pasta with a splash of pasta water, to loosen the sauce

  • Spread onto bruschetta, or stir through risotto in the final few minutes of cooking
  • Spoon over grilled chicken, fish or roasted vegetables for a hit of Calabrian heat
