Tutto Calabria’s Calabrian Chilli Peppers are whole peperoncini, grown under the Calabrian sun and slowly sun-dried before being preserved in a blend of sunflower and extra virgin olive oil. Tutto Calabria has been producing them since 1970, from the same small red chillies used in their nduja, and it’s the sun-drying that gives them their character – concentrating the natural sugars in the flesh so the heat arrives alongside real fruitiness and a faint smokiness, rather than flat, one-note spice.

Left whole, they hold their shape and a pleasant bite, so you can slice one over a pizza, tuck a whole pepper into an antipasti board alongside cheese and cured meats, or drop one into a simmering tomato sauce and fish it out before serving if you want the flavour without the heat. Chopped, they melt into pasta sauces, stews and marinades, adding warmth without masking whatever else is in the pan.

How to use:

  • Slice 1-2 peppers thinly and scatter over pizza or bruschetta for a fruity, gently building heat
  • Drop a whole pepper into 400g of simmering tomato sauce, then remove before serving for flavour without heat, or chop it in for a spicier sauce
  • Chop 2-3 peppers into an antipasti platter alongside cured meats, olives and cheese
  • Use the flavoured preserving oil as a base for dressings, or drizzle it over grilled vegetables
